Mighty Vegan Bars
This recipe started as a quest for healthy cookies for noshing pre- or post-workout. After several missteps we were lucky enough to end up with a thicker batter that actually tasted good, so we rearranged our idea...maybe instead of a healthy cookie, we could make bars packed with protein, loaded with fiber, that were still good for you and easy to carry.
So there you have it!
Coconut flour is the base for these bars; coconut flour is gluten free and has 6 grams of fiber and 2 grams of protein per serving!
3 ripe bananas
1/2 cup almond butter
3 tablespoons coconut oil
1 teaspoon vanilla
2 tablespoons maple syrup
1 cup oats
1 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup chocolate chips
Directions:
Preheat oven to 350 degrees.
In a mixing bowl combine bananas, almond butter, coconut oil, vanilla, and maple syrup. In a separate bowl, whisk together oats, coconut flour, baking powder, and salt.
Add dry ingredients to wet and mix very well. Sprinkle in chocolate chips and give one last stir. The mixture will have the consistency of a thin dough.
Place entire mixture into a glass or ceramic baking pan. [We used a medium sized (about 9x6 in) ceramic baking dish.]
Bake for 17-20 minutes, or until inserted toothpick comes out clean!
