Vegan Muddy Buddies
9 cups Rice Chex
1 cup vegan chocolate chips
1/2 cup almond butter
1/4 cup vegan butter (earth balance works!)
1 teaspoon vanilla
2 cups powdered sugar*
*The original recipe called for 1 1/2 cups, but we found we needed another half cup to evenly coat the cereal. Also, we made our own powdered sugar. To do this we added about two teaspoons of corn starch to the turbinado sugar and ground it in our food processor until it was powdery enough for our liking.
In a large bowl, measure and set aside Chex cereal.
In a separate microwaveable dish, add chocolate chips, peanut butter, and butter together. Microwave on high for about a minute. Stir. If mixture isn't very creamy, microwave for several seconds longer. Stir again.
Pour melted chocolate mixture over cereal and stir until evenly coated.
Pour chocolate covered cereal mixture and powdered sugar in a gallon sized plastic bag (or any other large mixing container), and shake until powdered sugar evenly covers chocolate and cereal. Spread cereal on a waxed-paper covered sheet pan to cool. Enjoy! (Any leftovers can be stored in the refrigerator.)
***According to emails with a General Mills rep, I found that while CORN Chex are NOT vegan (the D3 in the CORN Chex is derived from lanolin), RICE Chex ARE. Please be aware of this and be sure to buy the RICE Chex only to keep it vegan.***
